This week was an action packed week filled with a heap of studying , exercising and of course BAKING !!!Yesterday was a spontaneous bake as we were all craving sugar so we looked in the fridge /cupboard and found carrots, oats, sultanas, dried figs and tapioca! With those spontaneous ingredients we are presenting our super delicious healthy and easy carrot and tapioca slice. So here is what you need.
Ingredients
0. 1 1/2 Carrots thinly grated
1. 10 Dried figs ( cut into tiny bits)
2. 1 cup of Milk (skim)
3. 4 tbsp Honey
4. 1 1/2 cups of oats
5. 1/2 cup of tapioca
6. 1/4 cup of chia seeds
7. 3 good shakes of cinammon
8. 1 good shake of cardemon
9. 3 good shakes of all spice
10. 2 tbsp of extra virgin olive oil
Method
Step 0. Grate the carrots and place the cut up figs and sultanas all into a blender and blend until it becomes a chunky paste . If needed add a drop of water ( depends on our soft your carrots are ). Place all the blitzed ingredients in a lined baking tray and put it in the freezer
Step 1. Add the 1/2cup of tapioca with 1 cup of milk into a pot and cook . Make sure you keep adding water after and keep stirring until the tapioca turns clear. Once cooked place in a bowl in freezer
Step 2. Place 1 1/2 cup of oats with 1/4cup of chia with the cinammon, cardemon and all spice in a bowl
Step 3. Add olive oil and honey to the oats mix until well combined and clusters start to form . Place in oven at 180degrees Celsius until golden brown then into freezer immediately until the oats are hard clusters
Step 4. Remove the tin with the carrots add the tapioca on top. Smooth it out. Next add the clusters on top of the tapioca.
Tip !! Make sure the clusters are firmly pressed into the tapioca.
Step 5. Place the whole tray back into the freezer overnight / during the day
6. Cut slices and enjoy with a cup of herbal tea 😉
